Campfire French Toast

This little slice of heaven (all pun intended) is simply amaze-balls!  I make it regularly when we are camping for special occasions, and it makes a darn great alternative to offering kids Easter Eggs for breakfast on Easter Sunday. It's simple to make and oh so delicious. Ingredients : 1 Loaf of bread of your choice. 2-3 Large eggs beaten with a dash of milk Golden Syrup, fruit and icing sugar for serving Alfoil Baking paper Method : Take sheet of al-foil and top with a sheet of baking paper. Place a whole loaf of bread in the centre and make a "boat" around the whole loaf make sure it isn't too tight you want the egg mixture to fall between the slices. Pour the beaten eggs over the whole loaf making sure to let it dribble between the bread slices. Place another sheet of baking paper over the top, tucking into the boat and top with al-foil. Place near the campfire (not on it) and rotate every so often. when fully done take the top of the boat off

Campfire Breakfast Muffin

  If we are being honest, the number of people that haven't eaten a McDonalds Bacon & Egg or Sausage & Egg McMuffin are very few and far between, but really what is it? An English muffin, egg, bacon (or sausage) and cheese...right?   Why aren't we making these at home or better yet...over a campfire with a twist! I came across this  website  (the link is also below) and their Camping Breakfast Sandwich and oh my gosh it looked great and tasted even better. I couldn't resist sharing it with everyone. Its delicious and quick, 5 m ins to prep and 20 to cook. Boo-yah! Camp Oven Apricot Chicken

Sticking to the one pot camping meals using cast iron camp ovens (or just a saucepan, if that's all you've got) this is another amazing recipe and what makes it better is that it's just so simple and cheap. I also make it a home - I  guess it's just a general all-round-little-ripper. Apricot Chicken Ingredients: 1 Pkt French Onion Soup Mix (any brand will do) 1 Tin Apricots in Syrup (if use a large tin if you are feeding an army) Chicken - either left overs, fresh or BBQ'd - your choice Salt & Pepper *** if you want you can also turn this into a sweet curry version, like Mango Chicken Curry, only this one is Apricot Chicken Curry by adding curry powder to taste. Method: Cut the chicken into small pieces Empty the tin of Apricots in syrup into a bowl, smash the apricots into small pieces or mash them up in a bowl using a fork and add the packet of French onion soup mix. Brown the chicken in the camp oven (if using fresh raw chicken) and then add the apricots and
